Garlic is one of the oldest known seasoned plants and food flavouring, which managed to bring in itself to be a part of the culinary culture of many civilizations across the world. Garlic can be grown in a wide variety of soil conditions. Although a temperate crop, it is equally suitable for a wide range of climatic conditions, viz., temperate, tropical, and subtropical climates. Fresh garlic requires about 130 to 150 days to reach maturity.
The Dehydrated garlic granules being the finer particles of garlic flakes, are mainly used for decorating or garnishing the fruit and vegetable salads and prepared/cooked dishes to add the strong spicy and nutty garlic flavour. The garlic granules are mainly applied for improving the taste of different salads, momos, snacks, and hot fast foods. It is also applied to baked or roasted food items and spicy soups for a flavour of garlic.
In many food items such as baked or grilled foods and soups, the large-sized garlic flakes may not be appropriate to use. Therefore, some finer alternatives are also provided, such as the chopped, minced, granular, and powdered form of dehydrated garlic. Among these, the garlic granules are produced from the dry garlic flakes. The sorting process separates the unwanted matters/particles of plant roots and outer skin cover from the garlic flakes. Hence, the final dehydrated garlic product is free of these impurities and is of the best possible quality. In the subsequent step, it is further processed through the cutting machine. Lastly, it is processed via the Vibro table with nets dimension of 24-40 mesh, 40-60 mesh, and 40-80 mesh. Therefore, mainly three varieties of dehydrated garlic granules are produced as segregated by respective sized nets. These garlic granules can also be manufactured by further processing the secondary remains or by products of the chopped and minced dehydrated garlic, which are also successively manufactured from the dry garlic flakes. The Garlic granules have yellowish brown colour similar to raw garlic. The demand for this variety of dehydrated garlic granules is very high in the European nations, North America and Russia.
